Olive: Everything You Could Ever Know
On our last trip to Tuscany, Maria (my business partner) and I could not aid but notice that wherever you found grapevines, you also identified olive timber growing. In the Molise area of Italy, a quaint and rural region located from the south-central portion from the country, just southeast of Rome (where some of my loved ones even now lives) you will come across an agricultural area well-known for the manufacturing of olive oil, cheese and wine. It was here that a tiny household company was born. That was 4 generations ago, and these days that company, Colavita Extra Virgin Olive Oil, is alive and thriving, firmly grounded in its roots with manufacturing facilities in precisely the same Molise area (as effectively as a facility in nearby Pomezia).
Different varieties of olives ripen at distinct times. As Fran Gage tells us in her book, The New American Olive, "This lets them blend olive oils to their liking, mixing greener acrylic from an earlier harvest with acrylic that is riper and mellower, or mixing acrylic having a stronger taste profile together with a more delicate one. A skillful blender, working with fantastic lots of further virgin olive acrylic can create finished olive oils with complex character." What an art!
Imagine a lemon with all with the tart, citrusy tang, yet with out all that pucker power. Not a true lemon, but a cross in between a lemon and also a mandarin orange! Named for a U. S. Department of Agriculture employee by the name of Frank Meyer, who brought this delightful fruit back again from China in 1908, it is sweeter, much less acidic than the additional widespread lemon. By the forties, this not-so-little lemon (it's bigger and rounder than widespread lemons) was expanding VERY popular and was widely grown in California. However, Frank Meyer introduced again far more from China than he bargained for. With this delicious citrus came the citrus tristeza virus, a virus which killed millions of citrus bushes world-wide. The existing Meyer lemon trees have been destroyed in an attempt to save other citrus trees. But fear not, through the late fifties, early sixties, virus free Meyer lemons were again in stores.
Because they are sweeter than conventional lemons, yet nevertheless tangy, they make for the best infusion with olive oil... a marriage made in heaven. Both fruits (olives are fruit!) together, give us a lush, velvety background plus a fresh lemony tartness. Now that can kick a broiled fish up a notch or two. A nice, thick, white fish, dressed inside a lemony gold further virgin fat - so simple, yet so great together. Performs exactly the same magic with chicken!
Because Meyer lemons are so thin-skinned, they do not travel well. Infusing them with excess virgin olive acrylic solves that problem! And also you can replace butter with this lemony oil inside a recipe anytime. The two great tastes of Meyer lemons and extra virgin olive oil, coming together, develop endless possibilities.
Colavita is no stranger to Americans, who have noticed it on their store shelves for years. However, it seems there has been an awakening to fantastic further virgin oils grown in THIS country recently. California oils are taking gold medals more than oils from Italy, Greece and Spain. In the 2007 Los Angeles International EVOO Competition, a single from the most prestigious inside world, 396 oils have been acquired for opposition from 274 producers from 16 countries, including Italy, Greece, Portugal, Spain, Turkey, Israel and France. California oils garnered 101 medals - 34 of them gold. Just a year later, in 2008, in competing firms with 510 oils from 334 producers, California received 169 medals, 53 of them gold. Do you see a pattern? And with all of this competition, you and I are the benefactors. Shopping for fine, artisan, further virgin olive oil created inside USA isn't hard these days. They are popping up at farmers' markets, on-line shoppes and gourmet food stores everywhere.
